- Prepare the ribs.

- After few hours drain the water, put wood on the foil and wrap it.



- Light the fire and put the carbon briquettes on.


- Wait till there will be no more fire, then put the foil with the smoke wood and a heat reflector on.


- Put the ribs to the rack, insert the thermometer and cover the lid.



- After 1 hour remove the foil with the wood and reorder the ribs. Close the lid.



- Control the temperature.

- Prepare the sauce. Take some bbq sauce and add a little bit of water to make it more fluid. I also added few drops of Worcester sauce and a little bit of chilli.



- After 1 more hour remove the rack, put the ribs on the grill ant cover the top with the sauce. Close the lid. Turn the ribs upside down every 15 minutes and cover with new layer of bbq sauce.



- After 3 hours... Bon appétit 😋
